3-501.16 (A)(1) / TIME/TEMPERATURE CONTROL FOR SAFETY FOOD, HOT HOLDING Priority Item Corrected During Inspection Pulled chicken and pulled beef in Steam well being hot held at 118, 125°F. Product was still in large sauce pans in steam well and seated two high for maintaining proper food temperatures. Maintain time/temperature control for safety foods (TCS) at 135°F or above.
