Cream in soft serve mixer being cold held at 36-48°F. Back of mixer holding cream at 36F while front of the same holding basin was at 44-48F.
Maintain time/temperature control for safety foods (TCS) at 41°F or less. Wash sanitize mixer, Operator can use ice wands to maintain temperature of cream until repairs can be made. Make sure your changing out the ice wands frequently. (CORRECTED DURING INSPECTION). Correct By: 14-Dec-2022
