Frozen fish being thawed inside the original reduced oxygen packaging (ROP). The label on the packaging indicates that the product must be kept frozen or removed from ROP before thawing. Observed vacuumed sealed fish in the drwaers with warnings on the packaging.
Remove frozen fish from ROP packaging prior to thawing in refrigeration or prior to or immediately upon completion of thawing under running water (70°F or below). Correct By: 29-Jun-2022

Fruit salad, greens, cottage cheese, pasta salad in Prep drawers being cold held at 47-48°F. Salmon, potato hash brown, beef gravy, marinira in Grill line drawers observed at 53-54F
Maintain time/temperature control for safety foods (TCS) at 41°F or less. Discard all TCS foods held out of temperature more than 4 hours, Ice bath and rapidly cool foods processed within the last 4 hours. Correct By: 29-Jun-2022
