3-501.15 (A) / COOLING METHODS - PROCEDURES Priority Foundation Item Corrected During Inspection Salsa being cooled in 5 gallon buckets in WIC observed at 130F.. Operator stated the salsa was made at 12 pm this morning. Adjust procedures to assure that food is properly cooled to 41°F or below. Use one or more of the following methods: place food in shallow pans; separate food into smaller portions; use rapid cooling equipment; stir food in an ice water bath; use containers that facilitate heat transfer; add ice as an ingredient; or use other effective methods. Thin out salsa in smaller portions for rapid cooling in WIC. Recomend purchasing ICE wands to help facilitate proper cooling. Correct By: 09-Feb-2022 |
