Priority Foundation Item Corrected During Inspection Observed several prepared TCS food items without date marking (i.e. WIC- cooked brisket & cooked chicken; Upright Cooler- brisket sauce). Current staff is unaware of the actual production dates; however, items are not past expiration.
Ready-to-eat time/temperature control for safety foods prepared and held in refrigeration for more than 24 hours must be clearly marked to indicate a consumption or discard date of 7 days or less.
