3-403.11 (A-D) / REHEATING FOR HOT HOLDING Priority Item Corrected During Inspection Commercially packaged food, Chicken nuggets, only reheated to 92-105 °F for hot holding. Observed employee remove nuggets from oven and placed into Crescor hot holding unit. Commercially processed ready-to-eat time/temperature for safety food (TCS) must be reheated to a temperature of at least 135ºF within 2 hours.
