Priority Item Corrected During Inspection Observed cross contamination in the walk-in cooler (WIC). Marinating raw chicken & raw beef (stick) were not on the lowest possible shelf in the refrigeration unit, & on, over, or with ready-to-eat(RTE)/processed foods.
To prevent cross contamination, keep all raw animal products, including raw shell eggs, on the lowest shelf in the cooler, & not on, over, or with RTE/processed foods. ACTION TAKEN: WIC was re-arranged to prevent cross contamination.

Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. DISPOSE OF FOODS. ACTION TAKEN: OPENED GALLON OF MILK WAS DISPOSED. ALL OTHER FOODS WERE GENERATED YESTERDAY BY OWNER, WORKING ALONE LATE LAST NIGHT, & WERE DATE MARKED "OUT 3/3." HE HAS BEEN CAUTIONED TO HIRE MORE HELP OR FIND A WAY TO ENSURE THAT FOODS ARE DATE MARKED AS THEY ARE PRODUCED.

5-205.15 (B)/SYSTEM MAINTAINED IN GOOD REPAIR (REPAIRED)
One of the drain lines from the ice maker is down in the floor drain, an indirect connection by means of an air break.
An air GAP, the highest form of protection, is required here. Cut off this line so that it is completely up out of the floor drain. The waste water must literally flow thru' the air before it reaches the floor drain. This is to protect your food/ice & water supply in the event of a backup. Correct By: 11-May-2015. Action taken: THE DRAIN LINE HAS BEEN CUT OFF - AN AIR GAP HAS BEEN CREATED.
6-301.12/HAND DRYING PROVISION
No toweling available at dishwash handsink for hand drying.
Provide single-use toweling at dishwash handsink to facilitate proper handwashing. While the paper towel dispenser has broken, there still must be towels - put out napkins, a stack of towels, or the like. Correct By: 11-Feb-2015. Action taken: THERE ARE PAPER TOWELS AT THIS HANDSINK.

--MICHAEL WAS THE PIC AT A FOLLOW-UP CONDUCTED TODAY, OF A ROUTINE EVALUATION CONDUCTED ON 2/11/15. TWO PRIORITY FOUNDATION VIOLATIONS FROM THAT ROUTINE EVALUATION WERE CORRECTED. A PRIORITY VIOLATION CITED THAT DATE BUT CORRECTED WAS CITED AGAIN TODAY & CORRECTED RE: DATE MARKING. THIS MUST NOT RECUR. A NEW PRIORITY FOUNDATION VIOLATION WAS CITED TODAY, RE: CROSS CONTAMINATION. IT WAS CORRECTED DURING THE EVALUATION.
--THE DISHMACHINE WAS CHECKED AGAIN TODAY & FOUND TO BE CORRECTING INJECTING CHLORINE SANITIZER.
