Priority Item Corrected During Inspection Observed cross contamination in the walk-in cooler - raw eggs were not on the lowest possible shelf & were on, over, & with ready-to-eat (RTE)/processed foods.
To prevent cross contamination, store all raw animal products, including eggs, on the lowest possible shelf in refrigeration units, & not on, over, or with RTE/processed foods. Move raw eggs to the lowest possible shelf, & physically separate them from other foods.
Action Taken: Raw eggs were moved & are properly stored. All employees will ensure that cross contamination does not occur again. Correct By: 31-Mar-2014

--Traci was the PIC at a routine evaluation conducted today. One Priority violation and one Priority Foundation violation was cited, both of which were corrected at once. Two (2) core violations were cited, one of which is a repeat.
--There is a health policy in effect. Except for one area cited, the facility was found to be clean & orderly.
--Potentially hazardous foods checked were found to be in the temperature safety zone - see chart.
--Uncover your current foodservice license - it's yellow. It must be conspicuous to the public.
