Priority Item Corrected During Inspection Potentially hazardouis foods (PHF) in big prep reach-in cooler not being cold held at 41°F or less - chicken salad & meats @ 43--44 deg F, both on coldtop & in reach-in section; Italian portions on coldtop @ 48 deg. .
Maintain cold potentially hazardous foods at or below 41°F. Do not use this unit until it can be demonstrated that it can maintain PHF at 41 deg F, or below.
Action Taken: UNIT WAS TAKEN OUT OF USE. MEATS & CHICKEN SALAD WERE PUT INTO FREEZER UNTIL THEY WERE 41 DEG OR LESS. ITALIAN PORTIONS WERE DISPOSED. ANOTHER AMBIENT AIR THEMOMETER WAS PUT INTO THE REACH-IN SECTION OF THE UNIT, & SERVICE WAS CALLED. Correct By: 18-Aug-2015

Design the sewage system in a manner that would preclude a direct connection between the sewage system and the drain from which food is placed. Raise up or cut off this line so that it is completely up out of the floor drain, which is next to the ice maker. Correct By: 28-Aug-2015
