NO VIOLATIONS OBSERVED TODAY. - Observed good employee hygienic practices: clean uniforms, hair restraints, proper use of gloves, and did not observe any employees displaying illness symptoms that would require exclusion or reassignment of duties today. - Food, dry items, and equipment storage areas are clean, dry, off the floor, and protected from sources of cross-contamination. - Date-marking is being utilized correctly. - Fresh eggs are cooked for hard boiled only. - Thermometers are accurate and available in units. - Sanitizer test kits are available. - All other areas in substantial compliance.
