3-501.17/READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Observed marinara and butter sauce with an improper date mark of 8 days. Observed sliced roast beef with a date mark of July 19. Roast beef was discarded by employee.
Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Correct By: 25-Apr-2024 Action Taken: Employees have been trained for proper date marking.
4-602.11 (A-D)/EQUIPMENT FOOD-CONTACT SURFACE
Observed dried up salami/deli meat on the food contact surface of the meat slicer.
Properly wash rinse and sanitize the food contact surface of the meat slicer. Correct By: 16-Apr-2024 Action Taken: Food contact surfaces are being washed rinsed and sanitized properly.
6-202.16/EXTERIOR WALLS AND ROOFS, PROTECTIVE BARRIERS
There is a hole or leak in the ceiling located in hallway between the kitchen and the bar, which can allow the entrance of rain, wind or pests. No contamination of food present.
Repair the hole or leak to prevent entrance of any weather or pests. Correct By: 29-Mar-2024 Action Taken: Leroy Davis Roofing repaired the roof and there are no leaks at this time.
8-304.11/RESPONSIBLITIES OF THE PERMIT HOLDER
Observed no reheating or holding temperature logs available at time of follow up inspection. Facility shall keep temperature logs on site per office conference agreement.
Maintain reheating and holding temperature logs on site for review of regulatory authority per office conference agreement. Correct By: 25-Apr-2024 Action Taken: Reheating and hot holding temperature logs are being maintained per office conference agreement.
