4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Repeat Repeat X2 Observed the RIC by the salad bar located in the kitchen is leaking and water is pooling at the bottom. The RIC had an ambient temperature of 45 and all TCS foods had an internal temp of 41. Those foods were moved to a WIC.
Maintain equipment in good repair. Do not store TCS foods in this cooler until it is repaired. Correct By: 08-Jan-2022

This is a routine inspection. The PIC is knowledgeable of duties. The facility is overall clean and organized. Observed proper hand washing, glove use, and hair restraint.
