READY TO EAT, POTENTIALLY HAZARDOUS FOODS IN THE WALK-IN COOLER WERE FOUND WITH IMPROPER DATES OF DISPOSITION MARKED ON THEM. TWO OF THE CONTAINERS HAD FOOD THAT WAS PAST THE DATE OF DISPOSITION.
MARK ALL READY TO EAT FOODS WITH THE DATE THAT IT WILL EITHER BE CONSUMED BY OR DISCARDED. THIS DATE SHALL NOT EXCEED ONE DAY FOR PREPARATION PLUS SIX DAYS UNDER REFRIGERATION. THE CERTIFIED FOOD MANAGER'S CERTIFICATION EXPIRED IN JUNE. THERE ARE NO RECORDS MADE AVAILABLE TO THIS INSPECTOR SHOWING THERE IS A PERSON IN CHARGE WITH A VALID CERTIFIED FOOD MANAGER'S CERTIFICATE.
EITHER HAVE THE MANAGER RECERTIFY, OR HIRE A PERSON WITH A VALID CERTIFICATE SO THERE IS AT LEAST ONE CERTIFIED FOOD MANAGER ON STAFF. Correct By: 07-Feb-2019 Action Taken: THE HEAD COOK FOR THIS FACILITY IS ENROLLED IN A CLASS TO BECOME A CERTIFIED FOOD MANAGER. THE CLASS MUST BE COMPLETED AND THE EXAM SUCCESSFULLY PASSED.
