3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Priority Item Corrected During Inspection Observed pooled eggs, shelled eggs, tomatoes, and pancake batter in the cold wells being cold held at 49°F. The eggs and batter had only been on the line for an hour and were able to be cooled.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Staff moved the food items into the freezer to cool the food items quickly.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Observed the gasket on the reach in cooler on the next to the cookline was broken and observed the cold wells were not turned on and maintaining the cold top below 41 degrees.

Comments
This was a routine inspection of the facility. The facility was overall clean and organized. All hot holding temperatures were observed in the safety zone. The staff was observed using proper hair restraints, gloves, masks and hand washing.
