Priority Item Corrected During Inspection Moldy tomatoes were observed in the produce wakk in cooler.
Discard unsafe or adulterated food items.
Action Taken: The moldy tomatoes were discarded as required.

3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed cross contamination in the produce Walk in cooler. (1) A 2lb bag of raw chicken was found stored next to a box of cherry tomatoes on the upper shelving & above cucumber tomato, and diced red onions. Raw battered chicken was found stored above sauerkraut and olives. Two 18 count cartons of shelled eggs were found stored next to shredded Colby cheese.
To prevent cross contamination, store raw foods on the bottom most shelving below and away from cooked and ready to eat foods.
Action Taken: All raw foods were placed on the bottom shelving with other raw foods as required.

3-305.11 / FOOD STORAGE
Core Item Corrected During Inspection Three bags of onions were found stored on the floor in the produce Walk in cooler..
Store all food items 6 inches above the floor. .
Action Taken: The bags of onions were removed from the floor and placed on the provided shelving of the walk in cooler.

3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Priority Foundation Item Corrected During Inspection Cole slaw, cooked ribs, and Baked potatoes were found in th eproduce WIC withoit a date mark.
Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days.
Action Taken: The cole slaw, cooked ribs, and baked potatoes were labeled with an expiration date.

3-501.18 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DISPOSITION
Priority Item Corrected During Inspection Observed spinach dip container labeled with a preparation date of 7/2/21 AND 4 quarts of a french onion soup labeled with the prep date of 6/30/21.
Discard potentially contaminated or unsafe foods.
Action Taken: The french onion soup and the spinach dip was discarded into the waste basket and denatured as required.

4-601.11 (B-C) / EQUIPMENT, NONFOOD CONTACT SURFACES, AND UTENSILS
