3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed cross contamination in the walk in cooler : Raw London Broil was found stored on top of cooked prime rib in the cookline area walk in cooler. Shelled eggs were found stored next to Blue cheese dressing and mayo in the rear walk in cooler. Raw steaks were found stored on top of cooked ribs.
To prevent cross contamination, store raw foods on the bottom most shelving, below cooked and ready to eat foods.
Action Taken: All raw foods were moved to the bottom most shelving and the cooked and ready to eat foods were moved to upper shelving in these units.

3-305.12 / FOOD STORED IN PROHIBITED AREAS.
Core Item A bag of onions was found stored on the floor where they are subject to contamination.
Remove the food items from this area and store in a clean, dry area. Correct By: 18-Jun-2013
4-502.13 / SINGLE-SERVICE AND SINGLE-USE ARTICLES, USE LIMITATION
Core Item Mushrooms and olives were left in the cans after they were opened.
Discontinue the practice of using these single use items as storage. Place these food items in other bulk food containers and discard the cans. Correct By: 18-Jun-2013

Provide training on the proper way to store raw food. Discontinue the process of leaving (storing) mushrooms and olives in the can, once it has been opened.
