Priority Item Corrected During Inspection CHICKEN was observed coming into contact with absorbant cloth towels. tray lined with cloth towel, and towel on top of chicken in reach in.
Food contact surfaces of equipment shall be cleaned and sanitized before use with food. Single service items can be used much as paper towel.
Action Taken: manager removed cloth towels top and bottom of chicken trays.
