Priority Item Corrected During Inspection Observed 1 Ibs of swordfish loin (4 ounces each) that were incorrectly thawed. Swordfish was thawed in WIC without being removed from vacuum packaging.
Discard noted items. Noted item shall be kept frozen until used then removed from vacuum packaging and thawed under refrigeration immediately before use per instructions stated on original packaging.
Action Taken: PIC discarded noted item.

3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed raw beef stored above spinach in RIC at prep line. Observed 4 containers of raw chicken in WIC that were stored above raw beef and eggs.
To prevent cross contamination, relocate raw beef to the bottom and relocate RTE food above raw foods. Relocate 4 containers of raw chicken at the bottom of the shelving unit apart from raw eggs.

3-304.14 / WIPING CLOTHS AND WORKING CONTAINERS, USE LIMITATION
Core Item Observed several wet wiping cloths directly on prep area and food area.
Store wiping cloths in container of sanitizer solution when not in use. Correct By: 20-Jan-2023
5-205.11 / USING A HANDWASHING SINK
Priority Foundation Item Observed liquid and ice in handsink. Handsink is being used for dumping beverages during inspection and is unavailable for proper handwashing.
Train food employees that handwashing sinks shall not be used for any other purpose than handwashing. Correct By: 20-Jan-2023
