Priority Item Repeat Corrected During Inspection Observed cross contamination between cooked ribs stored directly on top of raw beef in the bottom shelf of walk in cooler
To prevent cross contamination, relocate the pan of cooked ribs above and away from the raw beef.
Action Taken: PIC relocated the pan of cooked ribs to a safe location

3-305.11 / FOOD STORAGE
Core Item Corrected During Inspection Observed 3 compartment sink of bar holding beer bottles with ice.
Relocate above noted items in a clean and safe location.Store all food items in areas which are clean and dry and not subject to contamination.
Action Taken: PIC relocated above noted items to the reach in cooler.

3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Priority Item Corrected During Inspection Observed a pan of raw steak, cooked vegetables, salami, and ham holding at 58 in reach in cooler next to the grill. As per PIC, these noted food items were holding in the unit for more than 10 hours.
Discard above noted items.Maintain cold potentially hazardous foods at or below 41°F
Action Taken: PIC discarded above noted items.

3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Priority Foundation Item Corrected During Inspection Observed no date marking on a bucket of cooked eggs and pasta in walk in cooler. Both items were prepared a day prior as per PIC.
Date mark above noted items by adjusting method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days.
Action Taken: PIC applied appropriate dates on above noted items.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Corrected During Inspection Observed the reach in cooler next to grill with the ambient temperature of 60. It was not able to maintain TCS food at or below 41.
Maintain above noted cooler at a temperature 41 or below.
Action Taken: PIC adjusted the temperature. The ambient temperature was recorded at 40 at the end of inspection

4-501.12 / CUTTING SURFACES
Core Item Two cutting board on top of reach in prep cooler had exceesive scratching or scoring.
Resurface or discard using above noted cutting boards Correct By: 18-May-2021
5-205.11 / USING A HANDWASHING SINK
Priority Foundation Item Corrected During Inspection Observed a bar handwashing sink holding 3 liquor bottles.
Relocate the liquor bottles away from the bar hand sink so that handwashing is accessible.
Action Taken: PIC relocated the bottles making handwashing accessible.
