Priority Foundation Item Corrected During Inspection Potentially hazardous foods (PHF), ready-to eat, (RTE) found in the walk-in cooler (WIC) & waitstation reach-in cooler (RIC) not date marked. Ex: opened gallon of milk for consumption; cooked potatoes; mashed potatoes; cooked chicken; cubed ham; cooked pasta (3 types)
Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Use masking tape, paper taped to containers, or similar, if you are out of Day Dots. ACTION TAKEN: IT IS POSITIVELY KNOWN WHEN ALL FOODS WERE OPENED/PRODUCED & THEY WERE MARKED WITH MASKING TAPE.
4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item 1)Shelf between the coldtop & Frigidaire reach-in freezeer is mostly raw wood. 2)Cardboard boxes are being reused, such as for foods in the Frigidaire reach-in freezer & tubs' tops.
Maintain equipment in good repair. 1)Render this shelf to be smooth & easily cleanable, such as with a light colored, epoxy enamel type paint or polyurethane sealant. 2)Cardboard is porous, absorbent, & cannot be reused. It cannot be cleaned. Use multi-use, cleanable plastic tubs or extra pans, for example. Correct By: 11-May-2015.
5-205.15 (B) / SYSTEM MAINTAINED IN GOOD REPAIR (REPAIRED)
Core Item One of the drain lines from the ice maker is down in the floor drain, an indirect connection by means of an air break.
An air GAP, the highest form of protection, is required here. Cut off this line so that it is completely up out of the floor drain. The waste water must literally flow thru' the air before it reaches the floor drain. This is to protect your food/ice & water supply in the event of a backup. Correct By: 11-May-2015.

Core Item Corrected During Inspection Mops stored in extractor in bucket.
Store mops to allow them to air dry without soiling walls, equipment and supplies. Provide a hook or clamp to hang mop(s). For now, drape them across the faucet to dry. ACTION TAKEN: MOP WAS TAKEN OUT OF THE BUCKET & PUT ACROSS THE FAUCET.

--MICHAEL WAS THE PIC AT A ROUTINE OPERATIONAL EVALUATION CONDUCTED TODAY. THREE (3) PRIORITY FOUNDATION VIOLATIONS WERE CITED, ONE (1) OF WHICH WAS CORRECTED DURING THE EVALUATION. FOUR (4) CORE VIOLATIONS WERE ALSO CITED, ONE (1) OF WHICH WAS CORRECTED DURING THE EVALUATION.
--THE ESTABLISHMENT WAS FOUND TO BE SANITARY & ORDERLY. GOOD PRACTICES & PROCEDURES ARE KNOWN & WERE OBSERVED TO BE IN USE - TIMELY, FREQUENT, & THOROUGH HANDWASHING; NO BARE HANDS CONTACTING READY-TO-EAT FOODS; RAW ANIMAL PRODUCTS STORED SO AS TO AVOID CROSS CONTAMINATION; & PROPER EMPLOYEE DRINKING CONTAINERS, TO NAME A FEW.
--THE DISHMACHINE WAS CHECKED & FOUND TO BE PROPERLY INJECTING CHLORINE SANITIZER IN THE FINAL RINSE.
--POTENTIALLY HAZARDOUS FOODS CHECKED WERE FOUND TO BE IN THE TEMPERATURE SAFETY ZONE.
--THERE IS A HEALTH POLICY IN EFFECT.
--THE DRIVEUP WINDOW IS SELF-CLOSING.
