Good practices & procedures, including timely, frequent, thorough handwashing; no bare hands on ready-to-eat foods; proper cooling procedures; clear & consistent date marking; potentially hazardous foods in the temperature safety zone; & the effective use of physical hair restraints were some of them noted today. |
