4-501.114 / MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER
Priority Item Observed the sanitizer concentration for chlorine in the dish machine is at 10 ppm. 3 compartment sink will be used to sanitize until machine is repaired.
Repair dish machine. Use test strips to measure proper sanitizer concentration and adjust the concentration accordingly. Correct By: 16-Aug-2023
5-202.12 (A) / HANDWASHING SINK, INSTALLATION
Priority Foundation Item Corrected During Inspection Observed the hot water at the bar handsink to be turned off so that no hot water was available for washing hands.
Provide a water temperature of at least 38°C (100°F) through a mixing valve or combination faucet.
Action Taken: PIC turned on hot water to hand sink.

Comments
The purpose of today's visit was to conduct a routine inspection of the facility. The facility was very clean and organized. All food was from an approved source and stored to prevent contamination. Employee demonstrated proper heating and holding temperatures. Proper personal hygiene practices were observed.

Violation 4-501.114 requires a follow up that shall occur no later than 8/16/23.
