3-301.11 (C) / PREVENTING CONTAMINATION FROM HANDS
Priority Foundation Item Corrected During Inspection Employee observed handling buns and cheese slices with bare hands.
Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling foods. ACTION TAKEN: The employee was instructed to use gloves, utensils, tongs, and or deli paper in order to prevent bare hand contact with foods that are ready to eat. The employee chose to use gloves.
3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed cross contamination in the WIC. Two pans on raw hamburger patties were found stored on top of bottled and canned beer.
To prevent cross contamination, store raw foods on the bottom most shelving. ACTION TAKEN: The raw hamburger was moved to the bottom most shelving, below and away from the beer.
2-301.14 / WHEN TO WASH
Priority Item Corrected During Inspection Employee observed not washing hands after placing a raw hamburger pattie on the grill, before placing gloves on their hands.
Before working with food, clean equipment, utensils, and single use or single service articles food employees shall properly wash their hands. ACTION TAKEN: The employee was instructed to hand wash after handing a raw foods, before handling ready to eat foods. See the verbiage list below.
3-603.11 / CONSUMER ADVISORY FOR RAW/UNDERCOOKED
Priority Foundation Item Consumer advisory on menu is missing as it pertains to hamburgers that may be served undercooked.
Provide a consumer advisory for animal foods served in a raw or undercooked condition. Correct By: 21-Oct-2014.

Provide training on the following: prevention of "Bare hand contact" with Ready to eat foods;
How to store raw foods;
How to prevent cross contamination;

A follow up inspection shall be conducted in two weeks to verify correction of violation 3-603.11.
