Store noted food items in another cooler or ice bath to cool down noted food items to 41F or below. Action Taken: PIC stored noted food items in a working cooler. |
4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION Core Item The wait station reach in cooler unit had an air temperature of 55F. All TCS food has only been there for two hours. THE coolers are not able to maintain TCS food below or at 41F. Maintain equipment in good repair. Do not store any TCS food until its repaired. |
