2-102.11 (A)(B)(C 1, 4-16) / DEMONSTRATION OF KNOWLEDGE Priority Foundation Item The Person in Charge (PIC) is unable to demonstrate knowledge from the previous enforcement actions and hearing. The issues discussed during the office conference and informal hearing were not followed as demonstrated by a failure to produce the WIC temperature log or repeated the citations of 6-301.11 and 6-301.12. The person in charge shall obtain training or training materials so they are able to demonstrate knowledge and train employees on proper food safety practices as established in the enforcement proceedures and hearings. 3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING Priority Foundation Item Corrected During Inspection Observed no datemarking labels on the sausage gravy or the sliced ham. PIC stated the gravy was made 3 days prior and the ham was thawed the night before. Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Action Taken: PIC provided datemarking labels for the noted items. |
4-302.14 / SANITIZING SOLUTIONS, TESTING DEVICES Priority Foundation Item Corrected During Inspection Observed no testing strips available for the chlorine solution. Provide a test kit or other device for measuring the concentration of sanitizing solutions. Action Taken: PIC left the facility and acquired testing strips. |
4-601.11 (A) / EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS Priority Foundation Item Corrected During Inspection Observed old food residue on the meat slicer blade. Maintain food contact surfaces in a clean condition. Action Taken: PIC disassembled, washed, rinsed, and sanitized the meat slicer. |
6-301.11 / HANDWASHING CLEANSER, AVAILABILITY Priority Foundation Item Repeat Corrected During Inspection Observed no soap available at the dishwashing handsink. Provide hand soap at handwashing sink to facilitate proper handwashing. Action Taken: PIC provided soap for the noted handsink. |
