4-501.114 / MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER
Priority Item Observed the sanitizer concentration for chlorine in the dishwasher is at 0 ppm. Dish machine was not dispensing sanitizer.
Repair machine so that it is dispensing sanitizer. Use 3 compartment sink to sanitize dishes until machine is repaired. Use test strips to measure proper sanitizer concentration and adjust the concentration accordingly. Correct By: 01-Mar-2023
Action Taken: PIC replaced the sanitizer container so that the dish machine is dispensing sanitizer.
Action Taken: PIC placed new sanitizer container at the dishwasher so that it is dispensing sanitizer. 3/6/23 BW

6-501.11 / PHYSICAL FACILITIES - GOOD REPAIR
Core Item Observed a leak in the kitchen, storage area, and mens bathroom. The ceiling tiles in these areas are missing and/or broken allowing water to leak in to the facility and causing the floor to be wet and slippery. No food is affected by the leak.

Comments
The purpose of today's visit was to conduct a follow up inspection of the facility.

Violation 4-501.114 has not been corrected.

Per conversation with EH Supervisor Tina Moore, restaurant owner Jessica Alanous' warewashing machine will be replaced within 2 weeks.
Wares may washed, rinsed, and sanitized in the 3-compartment sink until the machine has been replaced.

Please submit specifications of new machine to Cheryl Green before installation at cgreen@geneseecountymi.gov.

A follow-up shall occur in two weeks on 3/16/23, unless otherwise specified.
