2-402.11 / HAIR RESTRAINTS
Core Item Employees (cook, etc.) were not wearing hair restraints. Employees/food workers who have hair must wear a physical hair restraint - hat, net, bandana, visor, etc. - that effectively restrains the hair.

3-302.12 / FOOD STORAGE CONTAINERS WITH COMMON NAME OF FOOD
Core Item Food is not labelled. Clearly label the barrels of sugar, MSG, flour (?), under the main prep table.

3-304.14 / WIPING CLOTHS AND WORKING CONTAINERS, USE LIMITATION
Core Item Corrected During Inspection (B) Cloths must be in a wiping cloth solution and (E) Solutions must be up off of the floor. (B) Wet cloths were scattered about Cloth absorbs moisture, attracts bacteria, grows that bacteria, & spreads it. Keep cloths in a wiping cloth solution/sanitizer except when they are being used. (E)Pan of bleach water was on the floor. This solution must be up off of the floor.

Action Taken: Cloths were put in solution & solution was put up off of the floor.

4-302.14 / SANITIZING SOLUTIONS, TESTING DEVICES
Core Item There was no chemical test kit. Provide a test kit to set up & monitor your sanitizing solutions - 50 ppm for warewash & 100 ppm for wiping cloth solutions. This is litmus paper treated to turn color in the presence of chlorine bleach.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Cloth was under a cutting board. As stated above,cloth absorbs moisture, attracts bacteria, grows that bacteria, & spreads it. Use a "Board Mate," bar mat, or similar cleanable material under your cutting boards. Remove cloth towel.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item There is a shelf above the front prep/packaging table that is raw wood. This must be smooth & easily cleanable. Seal this wood shelf, such as with polyurethane, or paint it with a light colored epoxy enamel type paint.

4-501.12 / CUTTING SURFACES
Core Item Cutting boards are cut & damaged -note the discoloration. This is a repeat violation. If they cannot be ground down to smooth & easily cleanable cleanable,replace them.

4-501.14 / WAREWASHING EQUIPMENT, CLEANING FREQUENCY
