Core Item Corrected During Inspection Observed slime mold build up in the soda gun holster located at the bar.
Clean the soda gun holster at a frequency necessary to preclude accumulation of mold.
Action Taken: Employee washed rinsed and sanitized the soda gun holster.

6-501.12 / CLEANING, FREQUENCY AND RESTRICTIONS
Core Item Observed dust and grease build up on the wire racks located in the kitchen where clean dishes are being stored. Observed dust and mold build up on the fan covers and ceilings of the walk in coolers.

Comments
The purpose of todays visit was to conduct a routine inspection of the facility.

All holding temperatures were in the safety zone at the time of inspection.
Employee demonstrated proper heating temperatures.
Sanitizer is EPA approved and proper concentration per manufacturer is being used.

There is no need for a follow up at this time.
