Priority Foundation Item Corrected During Inspection Potentially hazardous foods are not being date makred - coldtop unit - lunchmeats - about 4 oz of turkey; about 2 oz of smoked turkey; about 2 oz of chicken; about a pint of half & half creamer, & 2 oz of chicken noodle soup. In the reach-in section was another opened container of half & half creamer, not date marked.
Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Today, dispose of these foods.
Action Taken: A date marking system is going to be set up at once.

Core Item The funnel that has been put in the drain at the ice maker eliminates the air gap that is required here. The water would back up & touch the lines, with bacteria potentially growing up into the ice.
Remove the funnel. Ensure that there is a minimum of a 1" air gap between the lines & the floor drain. Correct By: 26-Dec-2013

Comments
Sara & Frank were the PICs at a routine operational evaluation conducted this date. One Priority & one Priority Foundation violation were cited, both of which were corrected, as well as five (5) core violations, None are difficult to correct. While some were cleaning violations, overall this establishment was found to be sanitary & orderly.
A health policy continues in effect. The consumer advisory as required by current law is stated correctly on the menus. There is no takeout nor childrens menus. Employees were noted to be using good practices & procedures, including timely, frequent, & thorough handwashing; the effective use of physical hair restraints; & proper drinking containers.
