2-102.11 (A)(B)(C 1, 4-16)/DEMONSTRATION OF KNOWLEDGE
Observed the Person in Charge (PIC) is unable to demonstrate knowledge where handwashing is taking place in the bar area. PIC is also unable to maintain buffet cold holding temperatures at 41 degrees or below. If time as a public health control is going to be used, written procedures must be provided.
The person in charge shall obtain training or training materials in the areas of hand washing and cold holding so they are able to demonstrate knowledge and train employees on proper food safety practices. Correct By: 13-Mar-2024 Action Taken: PIC checks temperatures on buffet tables at 12,3,6pm rotations and keeps temperature logs for equipment. One handsink has been designated for use at the bar, and hand soap and paper towel have been provided.
6-501.12/CLEANING, FREQUENCY AND RESTRICTIONS
REPEAT X5 Observed the floor under all equipment to be heavily soiled with foods debris.
Clean the physical facilities at a frequency necessary to keep them clean. Correct By: 11-Mar-2024 Action Taken: PIC cleaned the above noted areas and implemented a frequent deep cleaning schedule.

This is a follow up inspection to the office conference. All violations have been corrected; these corrections shall be lasting to avoid further enforcement action by GCHD.
