Buffet was off during inspection. Remove above noted items and place in the WIC to hold at 41 degrees.Maintain cold potentially hazardous foods at or below 41°F Action Taken: PIC relocated above noted items to WIC to hold at 41 degrees.  |

Buffet was not turned on. All TCS foods were placed in buffet 3 hours prior and relocated to the WIC to hold at 41 degrees. Also observed ice cream freezer to be heavily encrusted with accumulations of ice. Turn on equipment. Maintain equipment in good repair. Action Taken: PIC turned on equipment to cold hold at 41 degrees. Remove encrusted ice from ice cream freezer. |
