2-201.12 / EXCLUSIONS AND RESTRICTIONS
Priority Item Corrected During Inspection The Person in Charge (PIC) did not restrict a food employee whom displayed a large scabbed over wound located on the arm.
The person in charge shall immediately restrict food employee from working with food, clean equipment, and unwrapped single-service and single use items.
Action Taken: Employee applied non permeable bandage to the wound.

2-402.11 / HAIR RESTRAINTS

Provide employees working in the food prep/cooking areas with an effective hair restraint (hat, hair net, beard restraint, etc.). Correct By: 13-Jul-2023
3-304.12 / IN-USE UTENSILS, BETWEEN USE STORAGE
Core Item Corrected During Inspection Observed the ice scoop being stored inside of the ice machine with the handle contacting the ice.
Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
Action Taken: Ice scoop was relocated to the proper location by the employee.

3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Priority Item Corrected During Inspection Observed kids milk being cold held at 47°F inside of the bar reach in cooler.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Employee discarded the milk during inspection.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Repeat Corrected During Inspection Repeat x2 Observed ice build up on the door and condenser of the walk in freezer. Observed an ambient air temperature of 47F in the bar reach in cooler.
Maintain equipment in good repair.
Action Taken: Ice build up on the walk in freezer door was removed and the bar reach in cooler was repaired and working per manufacturer specifications during inspection.

4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE
Priority Item Corrected During Inspection Observed a lid with dried food residue being stored in the clean dish area. Observed the can opener blade was covered in food debris.
Wash, rinse and sanitize dishes and utensils before placing in clean dish area.
Action Taken: Employee washed, rinsed and sanitized the lid and can opener when instructed to do so.

4-602.11 (E) / EQUIPMENT FOOD-CONTACT SURFACE
Core Item Corrected During Inspection Observed slime mold build up in the soda gun holsters located at the bar.
Clean soda gun holsters at a frequency necessary to preclude accumulation of slime mold.
Action Taken: Employee washed rinsed and sanitized the soda gun holsters during inspection.

4-901.11 / EQUIPMENT AND UTENSILS, AIR DRYING REQUIRED

Air dry all clean utensils before storage and before contact with food.
Action Taken: Clean dishes and utensils were rearranged to allow for proper air drying.

Action Taken: Employee labeled the working containers with the common name and discarded the unknown chemical.

Comments
The purpose of todays visit was to conduct a routine inspection of the facility.

Manager demonstrated knowledge of proper heating, cooling methods and reheating time and temperatures.

A follow up for violation FL 289.6125 shall occur no later than 10 days from date of inspection.
