Core Item Replace the missing grease catch cup on the cook line hood.
Provide adequate number and capacity of ventilation hoods or devices to prevent grease and condensation from collecting on walls and ceilings. Correct By: 2-Mar-2015.
4-602.13 / NONFOOD CONTACT SURFACES
Core Item Clean the following: Shelving under the cooking equipment, outer surfaces of the cook line RIC's , gaskets on RIC's, side panels on the grills, flooring in the WIF, and the inside the cookline RIC (left side of the grill).
Clean all equipment on a routine basis to prevent accumulation of soil residues. Correct By: 2-Mar-2015.
