Core Item All reach in coolers have serverly torne gaskets, The cold holding unit acrros form fryers had an air temperature of 60F and cannot maintaint TCS food below or at 41F. All reach in coolers had water pooling inside.
Maintain equipment in good repair. Do not store any TCS food inside the broken cold unit. Correct By: 06-Sep-2021
