Priority Item Corrected During Inspection Observed diced chicken in cold top being cold held at 48 degrees. Item was placed in cold top 30 minutes prior per operator. Cold top had not been turned on.
Relocate above noted item to WIC to maintain temperatures below 41 degrees. Maintain cold potentially hazardous foods at or below 41°F
Action Taken: PIC relocated above noted items to maintain temperatures at 41 degrees or below.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Corrected During Inspection Observed cold table cold holding at temperatures of 50 degrees. Cold table had not been turned on.
Turn cold table on so that it holds food at temperatures of 41 degrees or below.Maintain equipment in good repair.
Action Taken: PIC turned cold table on.

The purpose of today's visit was to conduct a routine inspection of the facility.

Facility was clean and organized.
All food was from an approved source.
Proper personal hygiene practices were observed.
Sanitizer was proper per manufacturer specifications.
