The food safety manager's certification has expired or they have not completed an approved training program. The owner is a CFM, and Rick Khallis CFM, both current. Owner does not work in the kitchen and Rick is only part-time. The CFM shall be a full-time employee in the kitchen. The food safety manager must renew certification that has expired or complete an approved training program.
