Priority Item Corrected During Inspection Temperature control for safety (TCS) foods held in Bison: beef patties, chicken, breakfast links, cooked potatoes, ham, turkey, sliced tomatoes, and lettuce being cold held at 48°F in front and back is colder 43F. Items were just filled after lunch and not at point of disposition.
Maintain smaller pans and quantities of foods to be used within 2 hours or less. Maintain cold potentially hazardous foods at or below 41°F. Do not use for long storage of TCS foods.
Action Taken: Adjustments were made to move TCS foods into smaller quantities and pans for quick use and short-term hold. Correct By: 21-Oct-2019

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Repeat Repeat X2: Bison cold-top reach-in does not maintain proper holding temperatures as ambient temp is 47-53F towards front due to right door does not properly close tight, has broken gaskets and is taped to keep gasket on. There is ice build-up on back due to moisture entering from the loose door without a tight seal.
