3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING Priority Foundation Item Corrected During Inspection Egg rolls and chicken in walk-in cooler is improperly date marked. Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Action Taken: Product was found without a date mark; Manager explained that all egg rolls and chicken are prepared on Wednesdays and Saturdays and the unmarked containers were from yesterday. Proper date marks put on product. |
