Core Item Corrected During Inspection Cooked beans and meat for nachos observed not in shallow pan for cooling in walkin cooler. Into cooling process 1 hr, beans/meat at a temp of 99 degrees.
Cool in shallow pans or in an ice bath
Action Taken: PIC placed beans/meat in a pan with ice surrounding.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Repeat. Replace the torn gaskets on the salad prep cooler doors. Walkin freezer gaskets have been replaced.

4-501.114 / MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER
Priority Item Corrected During Inspection Warewashing machine is not properly dispensing chlorine sanitizer.
Sanitize in the three compartment sink after warewashing and rinsing until service takes place.
Action Taken: Ecolab arrived before end of inspection and repaired machine. Found hole in tubing.
