Priority Item Corrected During Inspection Observed raw ground beef being stored over RTE boiled potatoes in the WIC.
To prevent cross contamination, store items with the highest cook-off temperatures at the bottom.
Action Taken: PIC moved the potatoes to a place where cross contamination cannot occur.

4-601.11 (A) / EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS

6-501.12/CLEANING, FREQUENCY AND RESTRICTIONS
Observed a build-up of old food, grease, and debris behind the grill and fryers.
Clean the physical facilities at a frequency necessary to keep them clean. Correct By: 24-Jan-2024 Action Taken: Facility was deep cleaned.
6-501.14/CLEANING VENTILATION SYSTEMS, NUISANCE, AND DISCHARGE PROHIBITION
Observed excessive grease build-up dripping off the hood vents above the grill and fryers.
Clean intake exhaust air ducts, exhaust air ducts and filters so they cannot be a source of contamination. Correct By: 24-Jan-2024 Action Taken: Facility was deep cleaned.
2-102.11 (A)(B)(C 1, 4-16)/DEMONSTRATION OF KNOWLEDGE
The Person in Charge (PIC) is unable to demonstrate knowledge from the previous enforcement actions and hearing. The issues discussed during the office conference and informal hearing were not followed as demonstrated by a failure to produce the WIC temperature log or repeated the citations of 6-301.11 and 6-301.12.
The person in charge shall obtain training or training materials in the areas of [items] so they are able to demonstrate knowledge and train employees on proper food safety practices. Action Taken: Facility was able to follow the processes of the established risk control plans.
Comments
This is a follow-up inspection as a result of the increased frequency routine inspection on 1/24/2024.
Facility is compliant in the following for the risk control plan that was established after the previous inspection.
:2-102.11 (A)(B)(C1,4-16) Demonstration of Knowledge - Temperature log booklet and issues from previous enforcement protocol and on the Risk Control plan corrected.
:3-501.17 Ready-to-eat, Potentially Hazardous Food, Datemarking - Datemarking present on all TCS foods
:4-302.14 Sanitizing Solution, Testing Devices - Multiple containers of testing strips available
:6-301.11 Handwashing Cleanser, Availability - Soap available at all handsinks with back-ups
:6-301.12 Hand Drying Provision - Paper towel available at all handsinks with back-ups
:6-501.12 Cleaning, Frequency and Restrictions - Facility deep cleaned and remains clean
:6-501.14 Cleaning Ventilation Systems, Nuisance, and Discharge Prohibition - Vents cleaned remain clean
