4-101.11 (A) / CHARACTERISTICS - FOOD CONTACT SURFACES EQUIPMENT AND UTENSILS Priority Item Repeat Corrected During Inspection Bulk bags(plastic and paper) from food items such as ( egg roll dough wrapper) used in direct food contact with food such as egg rolls and fried chicken, ready to eat wantons stored on a walmart plastic bag in the cola display cooler; blue plastic bag (previously used to store sprouts) covering fried chicken. Do not reuse previously used bags to store or line food. use food gradable bags. Action Taken: Operator stored above noted food items in an approved food gradable bags and containers. |
4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE Priority Item Corrected During Inspection All wok station utensils left out soiled with food residue and debris from one night prior; cutting board and knives heavily soiled with raw chicken debris from one night prior; all whiskers hanging soiled with food residue. Clean food contact surfaces anytime contamination has occurred.. Action Taken: Operator set up a three compartment sink to wash, rinse and sanitize all food contact surfaces. |
