4-101.19 / NONFOOD CONTACT SURFACES
Core Item Dish racks are observed to have a buildup of black grime.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
Core Item Multiple RICs located along main grill/prep area (small grill drawers, 2 door RIC under prep area, 2 door RIC under microwave, and waitstaff RIC under juice machine) and the Continental RIF are unable to properly cold hold; maintaining temperatures from 47 to 81 degrees. Most foods in these coolers had just been prepped. Foods which were in coolers overnight were not PHF.
Maintain equipment in good repair. Move all PHF to WIC. DO NOT USE THESE COOLERS FOR COLD HOLDING UNTIL REPAIRED OR REPLACED. Correct By: 28-Aug-2017

Comments
This is a routine inspection. At this time, proper glove use, handwashing, and hair restraints were observed. Cooler thermometers, food thermometers, and test strips are available. Rose Pest Control services the facility monthly. Time is used as a control for the cold line items on the buffet. Both chefs and owner are knowledgeable about proper food procedures. Proper reheating was observed in steam unit and proper cooling was observed in WIC. At the time of this inspection, a repairman had been called for service of multiple RICs on cookline (all on same circuit). A copy of the invoice of service shall be emailed to atefft@gchd.us by 8/28/17.
