Priority Item Corrected During Inspection Observed cross contamination in the reachin cooler. A pan of cooked baked potatoes was found stored on top of a box of raw chicken. 1/2 flat of shelled eggs was stored on the shelving with dinner rolls.
To prevent cross contamination, store the rawfoods on the bottom most shelving below and away from ready to eat foods. ACTION TAKEN: The eggs were moved to the bottom shelving and the potatoes were moved to the upper shelving as required.
3-501.15 (A) / COOLING METHODS
Priority Foundation Item Corrected During Inspection A stock pot of spaghetti sauce in the RIC was found at 60 degrees. See the procedures listed below.
Adjust procedures or methods to assure that food is properly cooled to 41°F or below. ACTION TAKEN: The spaghetti sauce was placed in the WIF in order to cool the spaghetti sauce down faster.

Clean the physical facilities at a frequency necessary to keep them clean. ACTION TAKEN: The kitchen floor was mopped during this inspection.
Comments
The spaghetti sauce and noodles was prepared on 12/15/15. for a fundraiser that will be held on 12/16.2014.

Provide training on the proper way to store raw foods and the proper way to cool foods.

All of the violations cited today were corrected during this inspection.
