Sausage crumbles were dated with 9/24/21 upon when food was placed into the freezer. Items removed from the freezer must be date marked upon placing into the refrigerator. Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days. Action Taken: Person-in-charge was able to place dates onto foods knowing the days she prepared the foods or pulled them from the freezer. Correct By: 10-Dec-2021  |
