Priority Item Repeat Corrected During Inspection Observed 2 containers of sliced tomatoes and chopped lettuce in the hot dog stand being improperly cold held (internal temperature 60 degrees) and without documentation. According to employee, these foods have been out for only an hour.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Employee placed TCS foods in a container filled with ice up to the food level. Correct By: 26-Sep-2018
