Priority Item The sanitizer concentration for chlorine dishmachine was at 10ppm per test strip.
Use test strips to measure proper sanitizer concentration and adjust the concentration accordingly. Repair noted dishmachine and in the mean time set up three compart sink to sanitize food contact surfaces. Correct By: 16-Dec-2022
4-601.11 (A) / EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
Priority Foundation Item Corrected During Inspection Several plates and one scoop soiled with dry food debris stored among clean food contact surface in the clean rack area.
Maintain food contact surfaces in a clean condition.
Action Taken: PIC placed noted items in the warewashing area to be cleaned
