5-205.15 (B) / SYSTEM MAINTAINED IN GOOD REPAIR (REPAIRED)
Core Item Two drain lines have an indirect connection by means of an air break, but an air GAP, the highest form of protection, is required here. The lines are down in the floor drains/drain cups but must be completely up out of them.
1)At the ice maker, the line from the ice making device, towards the back of the drain line cup, must be cut off so that it is completely up out of it. 2)At the driveup pop unit, the ice bin drain line is a black tape wrapped line, & it terminates in the floor drain down under on the left. It is just down in the drain but must be completely up out of it. Cut about 3/4" off of this line. These actions are to prevent contamination of your water supply & food/ice in the event of a backup. --THIS AGAIN WAS FOUND TO BE A VERY SANITARY & ORDERLY ESTABLISHMENT, FROM THE KITCHEN TO THE STORAGE ROOM TO THE MOPSINK AREA
--A HEALTH POLICY CONTINUES IN EFFECT
--GOOD PRACTICES & PROCEDURES ARE KNOWN & WERE OBSERVED TO BE IN USE - TIMELY, FREQUENT, & THOROUGH HANDWASHING; NO BARE HANDS CONTACTING READY-TO-EAT FOODS; THE PROPER THAWING PROCEDURE; & THE CORRECT MANUAL WAREWASH PROCESS, TO NAME A FEW.
--POTENTIALLY HAZARDOUS FOODS CHECKED WERE FOUND TO BE IN THE TEMPERATURE SAFETY ZONE - SEE CHART.
