Comments
This is a routine inspection. All cold and hot holding temps are within the safety zone. Proper hair restraints, glove use, and hand washing were observed. This facility uses prepackaged and precooked foods. All reheated foods are discarded after lunch and time is used as a control for chopped lettuce and tomatoes. Proper test strips were available during this inspection. All coolers are monitored with daily temp logs. This facility has wood countertops used as food prep areas. A call was put in and a message was left for Kitchen Director Karen Smith to verify wood type and food safe oil used to maintain wood's condition.

This sanitarian spoke with Karen Smith and the counter tops are made of hardwood maple and are conditioned with food safe oil.
