This facility was very clean and well organized. All hot and cold folding temperatures were in the safety zone. Proper glove use, hair restraint and hand washing observed. Observed correct wash, rinse and sanitize of hot holding meat slicer. HAACP plan in place for roast beef. Observed proper thawing of corned beef via walk-in cooler. There are no violations to report at this time. |
