3-301.11 (B) / PREVENTING CONTAMINATION FROM HANDS
Priority Item Corrected During Inspection Employee observed handling hard boiled egg for a salad with bare hands. Observed staff discard food after they were stopped by local health department sanitarian.
Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready to eats foods.
Action Taken: Staff discarded egg and put on gloves to handle ready to eat food.

3-304.15 (A) / GLOVES, USE LIMITATION
Priority Item Repeat Corrected During Inspection **Repeat x2** Gloves are not being properly used. Obserevd staff handle raw eggs and proceed to go to toaster area to work with bread without changing gloves. Staff was stopped as they prepared to handle bread out of bag.
Single-use gloves shall be used for only one task such as working with ready-to-eat food and discarded when damaged or soiled, or when interruptions occur in the operation.
Action Taken: Staff changed gloves and washed hands, staff was more consistent following this incident.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION

Priority Item Corrected During Inspection The meat slicer was observed not cleaned after being used for slicing meat. Observed dried on food debris.
Clean food contact surfaces anytime contamination has occurred..
Action Taken: Staff took meat slicer to dish staff to be cleaned properly.

5-203.11 / HANDWASHING FACILITIES - NUMBERS AND CAPACITIES
Priority Foundation Item Handwashing sink not provided on the cookline, the sink was currently disconnected to move to the other side of cookline, and has not been installed yet. Staff has to go to handsink near dish area to wash hands.

Comments
The facility was overall clean and very organized. All hot and cold holding temperatures were observed in the safety zone. The facility will be charged a $104 fee and an office conference will be scheduled if upon next routine inspection glove use limitations are not met.
